Homemade Banana Bread

Anyone else baking more during the COVID-19 "stay at home" order? My husband and I just moved and several people from our church volunteered to bring us meals or send us grocery store money to help us out. I think I'm still in shock by the kindness they have shown us!

I've been wanting to make homemade banana bread for awhile now so I figured today was a great day to run to our small town grocery store and pick up the ingredients to make Homemade Banana Bread! If you like super sweet recipes this may not be for you. I'm currently 32 weeks pregnant and trying to limit my sugar as much as possible.

Here's what you need:

-3/4 cup Organic Coconut Flour

-1/4 cup Organic Stevia

-1/4 cup Bake Believe Dark Chocolate

-1 tablespoon Baking Soda

-Cinnamon Bark Vitality

-4 Ripe Bananas

-5 Eggs

Step 1: Mash the 4 ripe bananas and mix with flour, stevia, baking soda and eggs.

Step 2: Add 2-3 drops of Cinnamon Bark Vitality to the mixture.

Step 3: Add 1/4 cup of chocolate chips.

Step 4: Bake at 350 degrees in a 9 inch pan (I love my Pampered Chef stoneware) for about 50 minutes.

**I think mine cooked a little longer than needed so maybe watch about the 40-45 minute mark and see if it needs the full 50 minutes.

Step 5: Sprinkle a few more chocolate chips on top right before you remove from the oven or right after.

I loved this recipe! Again, this is not a super sweet version of Homemade Banana Bread. If you want it sweeter, substitute the dark chocolate for semi-sweet chocolate chips or use regular sugar instead of stevia.
