My parents have been following the Keto diet for about a year now and on one of their recent visits to my house they purchased some Organic Coconut Flour. I've hardly used the Coconut Flour and so I've been experimenting with coconut flour based recipes. I am not following a specific diet myself, but I know that eating carbs constantly isn't good for my health so I'm thankful to add this low-carb recipe to my collection. Spring is also on the horizon which means it's time for some delicious fruit bread!
Step 3: Mix dry ingredients and add to bowl with eggs.
Step 4: Add butter, vanilla and lemon essential oil.
Step 5: Add 1 cup frozen strawberries.
*My husband and I agreed afterwards that we probably could have used more strawberries to add extra moisture to the bread.
Step 6: Bake for 50 minutes at 350 degrees.
*As you can see in the above photo, I forgot to set a timer so I baked it slightly too long. Be sure to set an alarm and only bake for 50 minutes!
I will warn you. If you aren't used to eating Keto or "healthier" bread recipes, this isn't sweet! I thought afterwards that a stevia sweetened lemon glaze on top would be the perfect addition to this recipe. I am currently out of stevia so I melted a small amount of butter with regular sugar and poured it on top of the bread. Next time I make this recipe I plan to add more strawberries as well.
